This simple recipe is a wonderful way to serve freshly caught local fish.
Ingredients:
- 1 T oil
 - 1 fresh red or green chilli finely sliced or substitute dried chilli to taste
 - 1 onion diced
 - 1 T preserved lemongrass or kafir lime
 - 1 x 400ml can of coconut milk
 - 2 cups of diced fresh tomato, or 1 can of crushed tomato
 - juice of 1 lemon or 2 limes
 - 2 T fish sauce
 - 1 T brown sugar
 - 4 to 6 fresh white fish fillets
 - salt and pepper
 - a handful of fresh herbs
 - rice or cauliflower rice
 
Method:
- Heat the oil in a medium saucepan, add the chilli and onion and cook until tender
 - Add the coconut milk, lemongrass or kafir lime and simmer for 5 minutes
 - Add the tomato, fish sauce and brown sugar and simmer for 10 minutes
 - add the fish and simmer until the fish is cooked (about 5 minutes)
 - add salt and pepper to taste
 
Serve with rice or cauliflower rice and sprinkle with fresh herbs
