Tasty fish curry

This simple recipe is a wonderful way to serve freshly caught local fish.

Ingredients:

  • 1 T oil
  • 1 fresh red or green chilli finely sliced or substitute dried chilli to taste
  • 1 onion diced
  • 1 T preserved lemongrass or kafir lime
  • 1 x 400ml can of coconut milk
  • 2 cups of diced fresh tomato, or 1 can of crushed tomato
  • juice of 1 lemon or 2 limes
  • 2 T fish sauce
  • 1 T brown sugar
  • 4 to 6 fresh white fish fillets
  • salt and pepper
  • a handful of fresh herbs
  • rice or cauliflower rice

Method:

  • Heat the oil in a medium saucepan, add the chilli and onion and cook until tender
  • Add the coconut milk, lemongrass or kafir lime and simmer for 5 minutes
  • Add the tomato, fish sauce and brown sugar and simmer for 10 minutes
  • add the fish and simmer until the fish is cooked (about 5 minutes)
  • add salt and pepper to taste

Serve with rice or cauliflower rice and sprinkle with fresh herbs
